Our Beach Part 2

This morning the weather was fine  23C. It was till warm in the afternoon but we had torrential rain along with thunder and lightening. It also seemed like we had a perpetual high tide.

An evening video. Please watch until the end to see the sunset.

I hope you had a relaxing day like I did.

Our Beach

Just a little post to show you how the water was today. I took this while standing on our deck.

I’ll post again if the weather gets worse.

There’s a Tornado watch issued for parts of Alabama but it doesn’t appear to be for Gulf Shores.

I’ll keep you updated.

Salad #2

Winter Squash Salad

Since the last couple of days were just our regular routine: gym/yoga, Starbucks, groceries, and then back home we decided that after yoga today we would have an afternoon outing and go to the Tanger Outlet Mall https://www.tangeroutlet.com/foley

We know the area much better this year so we will do this shopping outing more often for shorter times this year. I was sooooo good. I looked but didn’t buy anything at these outlet stores. (Well, actually, I really didn’t see anything that called to me.) Richard did well at T J Max. He got a beautiful red Nautica jacket and a really nice grey zipped hoodie. From here we went to Marshall’s. I have to admit I did buy a few things here-all amazing prices: a cute striped Tommy Hilfiger summer blazer, a red sweater that I couldn’t pass up as I love red, and a new yoga top. Now imagine this. Richard bought another jacket: gorgeous Tommy Hilfiger marked down to $40. He just couldn’t leave it there. Another stop for Richard was to get a fishing license.

Now for the real highlight of the day.

We had dinner at The Safari Club Restaurant. https://safariclubgulfshores.com/

We were excited to go here especially because of this:

“As Alabama’s first certified “Green Restaurant”, we have been singled out by the Green Restaurant Group in Boston as a leader in conservation, recycling and reduced waste. We have made great strides to be an energy-efficient operation, we use no Styrofoam products, no plastic straws and all to-go containers are bio-degradable and or recyclable. We have teamed with the City Gulf Shores recycle program and instituted protocols for recycling a wide variety of waste.

We have onsite composting and work directly with our animal care staff to utilize every possible product for our animals. In order to reduce our carbon imprint we have taken measures to reduce the average 2 week and 1500 mile journey food products travel to their final destination by sourcing our ingredients locally. Not only are we contracting with local farmers, but we also have an on-site garden that will produce fresh fruits, vegetables and herbs.

We have extended our mindset in our bar area as well, at the BAR TUSK our motto is “Saving Elephants One Drink At A Time” and actually we are, as a percentage of profits go directly to small conservation efforts that are making a big difference in Elephant Conservation in Both Asia and Africa. With your help we can save the world’s most magnificent creatures.

Isn’t that exciting! 😃 I had to include all of the above so you could read it yourself.

What a great spot. More vegan and vegetarian selections than I’ve ever seen in a restaurant.

Here’s the appetizer we shared:

Crunchy Goat Cheese – goat cheese covered in a crunchy almond crust served on a bed of greens, blueberries, and strawberries accompanied by fig jam. So so tasty.

Richard ordered the Bacon and Cheeseburger which he said was very good. I ordered the Winter Squash Salad. Oh my. Words cannot describe how good it was and look at this presentation.

Local squash, cherry tomatoes, crisp apples, charred sweet potato, toasted pumpkin seeds, and caramelized leek vinaigrette. I’m glad they put the vinaigrette on the side as the taste was so strong I only used a small amount.

This is definitely a place where we’ll return.

What a wonderful end to a great day. I hope you had a great day.

Salad #1

Those who followed my blog last winter may remember each week I made a traditional Alabamian or southern recipe. I never found those to be the most healthy of meals so this year I’m doing at least one salad each week. Some are from restaurants, som are Alabamian recipes, and others are interesting salad recipes I found or salads I’ve made in the past and really enjoyed.

As our neighbours are joining us for dinner tonight and I decided to make enchiladas I looked for a Mexican salad. Looks delicious to me so I hope it tastes as good as it looks.

In case you’re interested here’s the enchilada dish.

And the dessert was flourless brownies that I served with vanilla ice cream.

One more look at the salad because I thought the colours were beautiful.

Now off to get changed and ready for our guests.

George and Our Beach

These were my views this morning as I sat reading on the deck after breakfast. Don’t get tired of that view of our beach.

George, our local Blue Heron, was keeping an eye on us from next door.

Not a lot to tell about today but just thought I’d touch base with you.

Mid morning we went to the library, gym, Rouses grocery store, Walgreens and then back home.

Sorry everyone on PEI, I know this may be hard to hear especially since you may be having some snow come your way (we listen to Island Morning on CBC 96.1 every morning), but we spent the afternoon on the deck. Can’t complain about 19C. Sweet.

Tomorrow will be a busy day. Our neighbours are coming to dinner so I’ll be up early preparing for that. Richard gets to clean while I cook. Fair deal. I’ll share the menu with pics in tomorrow’s blog.

Hope you had a great day.

First Sunset

What a lazy day!

I slept in. What a treat. After being awake over 18 hours yesterday it felt heavenly.

The sky was clear, the sun was hot, and I spent many hours sitting on the deck. Ahhhhh. Heavenly.

In all honesty i have to admit I had a nap in the middle of the afternoon. Oh my. But after very little sleep Friday night I guess I needed it.

A little visit with our next door neighbours catching up and looking forward to having them over for dinner on Tuesday.

Tomorrow will bring me back to last years routine: gym, library, Starbucks, etc.

Not a lot to say today but I wanted to keep in touch.

Hope you had a nice relaxing Sunday.

Made It

Hallelujah- I got a seat on the 4:25 flight to Pensacola. Perfect. There was quite a bit of turbulence but by making that flight meant I arrived in Pensacola at 5:47 pm instead of 9:30 pm so I’m not complaining. Richard arrived just after I did so it was perfect timing.

An hours drive home and starting to get settled in. Only did a tiny amount tonight (not my usual style-I usually have to put everything away right away). But since I’ve been up for 17 hours I think that was enough.

I’m glad I’m here. The rest can wait until tomorrow. Slept well everyone. I know I will.

Nite y’all.

Gulf Shores Here I Come

Up at 3:00am to head off to the airport to begin my day long journey to Gulf Shores, Alabama. Thank-you to my son-in-law Scott for getting up sooooo early to drive me there. What a nice thing to do.

My itinerary:

Charlottetown,PEI -Toronto,Ontario- Houston,Texas – Pensacola, Florida. Richard’s picking me up in Pensacola as it’s only a little over an hours drive from there to Gulf Shores.

A long day.

Air Canada for the first two flights and then United for the last one.

Left Charlottetown at 5:25 headed to Toronto, Ontario. What a great flight. No issues. A first for me. I flew with Aeroplan air miles and poor me I had to fly Business. Isn’t that such a hardship? Too bad I couldn’t do that every time: big, comfy seats, a full course breakfast, iPads and headphones. Fabulous!

In Toronto it can be rather time consuming getting through US customs but thank goodness I have a Nexus card. What a breeze. No lineup for me at all. Yippee!

Again another on time flight. This one to Houston, Texas. And yes, Business class again. And another great meal. Easy to get spoiled.

Now in the Houston International Airport I landed at Terminal A. I had an inkling that I wasn’t in the correct terminal for my next flight. I was correct. I had to go to Terminal B by finding and taking the Skyway. And yes I did it and didn’t get lost. Whew! Once there I had the bright idea to check at the United Airlines Service Desk to see if there was an earlier flight to Pensacola, Florida. They put me on stand by.

So here I sit waiting to see if I get on the 4:25 pm flight or if I have to wait for the 7:55 pm flight (my original flight). Fingers crossed.

Will let you know.

Cheers

Debi
