After having seen this poster a few weeks ago we were excited to finally go to the Ballyhoo Festival this morning.
What a disappointment.We apparently envisioned more than it was. There was live entertainment and the woman we heard was pretty good.
but the rest was just tents with crafts, pottery, jewelry, paintings, etc. for sale. Guess I’m past buying those things. There would also be food but we were there too early to partake.
This afternoon was so nice we stayed home and enjoyed the sun on the deck. Then in late afternoon we went for a beautiful beach walk.
Yesterday I mentioned that I had made a nice dinner. It was a new recipe for me and this is why.
In the grocery store we had seen these: tomatillos. Intriguing.
So I went on a search to find recipes utilizing them. Hmmmm. Not as easy as I thought it would be. Basically all I found were salsa recipes. So that’s what I went with.
Lime- Marinated Chicken and Tomatillo – Corn Salsa
I served it with spicy couscous (we had bought a pkg. of this a month ago), lime sour cream (included in the above recipe), plus the Blueberry Feta Salad that I shared with you yesterday. We liked it. Not sure if I can ever make it at home as I’ve never seen fresh tomatillos in the stores there.
