Chopped Thai Chickpea Salad with Curry Peanut Dressing

Absolutely love this salad. The only alteration I made was omitting the jalapeño. Next time, and there definitely will be a next time (or many next times) I’ll make the cabbage finer. It was a bit too thick and too long. I’ll use the spiralizer and see how that works out. The cilantro is a tasty addition.

The peanut dressing is out of this world. It was so delicious.
